The Wine
In case you’re new or simply haven’t heard, one of our top winemakers Down Under of 20 years standing, Sam Trimboli, is now working with another favourite (and star attraction at our annual wine events) Bill Calabria. Sam crafted this robust rosé from pristine Shiraz grapes grown on Bill’s estate in Griffith and by some of his mates just down the track. A gentle crushing and quick separation of juice from skins lead to the classic rosé colour. Flavour wise you get that unmistakable Shiraz blackberry fruit with a little hint of fresh pepper but none of the tannins you’d find in full-on red Shiraz. That makes it ideal with wild Alaskan salmon or seared tuna. And come the barbecue season, it’s perfect with char-grilled chicken drumsticks.
