The Wine
The Princess may register as 15%, but it’s no heavyweight and slips down with velvety ease. A classic GSM blend (Grenache, Shiraz, Mataro), it was made by winemaker Dan Graham at the boutique RedHeads winery. With his great network of grower contacts, Dan every year finds the best grapes to make his award winning range of wines. In 2015 the Grenache was from 65 year old bush vines grown on the McLaren Flat’s sandy soils (that’s the pure raspberry notes), while the Shiraz is from the Willunga and Sellicks areas (dark black fruit and mocha tones) and the Mataro from the deep red, iron rich soils of the Barossa’s Ebenezer. Noticeably cooler there, the grapes ripen slowly, gaining peppery black fruit. A top choice with ceps risotto or pork.
