The Wine
High praise for Clos de la Roche from none other than Robert Parker: “This 41-acre vineyard with its extraordinarily rocky, well-drained soil frequently produces some of the greatest wines in all of Burgundy.” This particular example is from world famous négociant house Albert Bichot, prominent in the region since the 1830s. The team works closely with growers to assess the perfect time to begin the hand-harvest. When fruit arrives at the cellar, it’s carefully hand sorted prior to a maceration and fermentation process lasting up to 28 days. A 16 month barrel slumber adds layers of complexity to this powerful Burgundy which will continue to develop for another 15 years. Decant at least an hour before serving with pheasant with chestnuts.
