The Wine
The Elqui Valley is as extraordinary a wine region as you’ll find – anywhere. Just next door to Chile’s inhospitable Atacama Desert, it hasn’t seen rain for six years, yet thanks to snowmelt from the Andes and the wonders of irrigation, green and flourishing vineyards stand out in stark contrast to their surroundings. From a winery created by two Italians, Aldo Olivier and Giorgio Flessati, Elqui River is made from hand picked grapes, fermented at low temperature to lock in the aromas, and allowed to mature on its lees for a creamy complexity. A classic New World Sauvignon in character, it offers elderflower and ripe melon aromas followed by deliciously concentrated citrus fruit. Serve well chilled with simple fish or shellfish dishes.
