Having said that, this wine is no blockbuster, but has elegance, length and balance. This is fourth generation winemaker Jean-Marc Diffonty’s flagship red. He selects the finest Grenache, Mourvèdre and Syrah from the oldest (100+ years) vines and then ages the wine for 12 months in oak, 7% of that new, to craft a consistently brilliant red which attracts plaudits and awards every year. As with any 2015 Châteauneuf, Château Sixtine will reward your patience when the flavours develop and the tannins soften over the next decade. If you can’t wait, decant two hours before serving with lamb or game dishes.
