The Wine
Here’s another thrilling new discovery, courtesy of our Bordeaux trained winemaker and claret buyer, Jean-Marc Sauboua. He’d heard that a renowned architect had bought a château in Graves and was turning it into a cultural centre. Even more importantly, the property was also making cracking claret. Jean-Marc was impressed with what he found – rigorous selection in the vineyards means that only the healthiest, most concentrated fruit makes it to the state of the art, newly installed cellars. A large range of small vats allows parcels from different sites to be vinified separately and blended to perfection later on. Finally 12 months in fine oak casks lends an extra flavour dimension. Decant an hour beforehand and serve with your next roast.
