The Wine
Charles Back has an instinct for which grapes will grow best where and a knack for experimentation. He grew up on the historic Fairview estate in Paarl and trained in oenology and viticulture in Stellenbosch. His knowledge, expertise and experience make him one of the Cape’s top names in wine. Since the end of apartheid he has brought a number of new grape varieties to South Africa. Today the Darling region is known for producing stellar Sauvignon Blancs thanks to its proximity to the Atlantic and the vineyards’ elevation, particularly in the Groenekloof ward. This delicious Sauvignon has immediate freshness followed by ripe nuances of tropical fruit. It marries especially well with pan-fried fish, salads or aromatic prawn stir-fry.
